Why Not Try: A Halloumi Lunch Salad

As part of our monthly kit, you will occasionally receive some recipe suggestions on the back of our insert, for some of the products within the box and not so long ago, Krave Kit featured Dr Wills mango sriracha and as soon as we saw it, we had a thought for one of our favourite things

We have a little secret for you...

WE LOVE SALAD! Yes, that green stuff. We eat it every day. At least once. And we like to switch it up too. Add a little flavour, a little colour and a little pzazz!

For this salad, this is what you'll need...

Ingredients: 

  • Salad leaves (spinach, chard, watercress, rocket - any or all)
  • Chopped avocado
  • Chopped coriander
  • Finely sliced cabbage (white or red)
  • Chopped Spring Onion 
  • A few Piccolo tomatoes halved or quartered
  • Cucumber sliced
  • A drizzle of olive oil for the dressing 
  • Halloumi Slices
  • Dr Wills mango sriracha sauce
  • Salt & Pepper
  • A splash of ACV
  • A boiled egg

You can chop and change to your likes and the contents of your fridge really but these are just some of our favourite combinations! Once all your vegetables are combined in a bowl, dress with olive oil, a little apple cider vinegar and salt and pepper. Set aside. Heat a little oil in a pan and fry your halloumi slices for a few minutes on each side or until golden. Serve with your salad and egg, top with a few dollops of mango sriracha sauce and a sprinkle of seeds for some all important nutrients. Enjoy immediately and while the halloumi is still soft on the inside and crispy on the outside. It's a flavour party and a perfect light lunch! Halloumi not your thing? No problem! You can replace with chicken, pork strips, salmon or even tinned tuna!
